  • 200g plain flour
  • 2 oranges
  • 1 egg, beaten
  • Handful pistachio nuts, roughly chopped
  • 1 tsp baking powder
  • 200ml semi-skimmed milk
  • 1 tbsp sunflower oil or vegetable oil
  • 220g tub ricotta


Cut the skin and take it away from the oranges, then slice them into rounds. Put the baking powder, a pinch of salt, and flour in a big bowl. Form a well in the center, pour in an egg, and splash milk into it. Make use of a wooden spoon to slowly put the flour into the liquid until you have a lump-free mix. Toast the slices of bread and spread houmous uniformly over 1 side of each slice. Over 1 slice of bread, put half the tomato, rocket, and avocado. Spell with pepper, and then cover it with another slice. Mound on the rest of the rocket, avocado, and tomato, spice again, and cover the top with the third slice.
