- 200g plain flour
- 2 oranges
- 1 egg, beaten
- Handful pistachio nuts, roughly chopped
- 1 tsp baking powder
- 200ml semi-skimmed milk
- 1 tbsp sunflower oil or vegetable oil
- 220g tub ricotta
Cut the skin and take it away from the oranges, then slice them into rounds. Put the baking powder, a pinch of salt, and flour in a big bowl. Form a well in the center, pour in an egg, and splash milk into it. Make use of a wooden spoon to slowly put the flour into the liquid until you have a lump-free mix. Blend in the rest of the milk, and then beat in the ricotta. Heat a non-stick frying pan and add oil in it. Spin it around the pan, and tilt out excess of oil into a heatproof bowl. Put 3 or 4 tablespoons of batter that are spaced well apart to make pancakes. Cook the mixture on medium heat for 2 minutes until droplets appear on the surface. Toss over with a palette knife and cook it for 2 more minutes until it becomes golden. Set aside and keep it hot, and cook the rest of the mixture. Pile the pancakes, mound the orange slices on the top, spit with honey, scatter some nuts, and then serve warm.
